British Virgin Islands (N. America) 7 July 2023

The British Virgin Islands are located in the continent of N. America. They have the Atlantic Ocean to the north, the Caribbean Sea to the west, the Virgin Island (U.S.) to the south, and the Dominican Republic to the west.

The British Virgin Islands consist of the main islands of Tortola where Road Town, the capital, is located, Virgin Gorda, Anegada and Josy Van Dyke.  

The official language is English.

The climates are a tropical rainforest with temperatures ranging from 8402F to 89.6F throughout the year. Hurricane season if from June to November.

FISH AND FUNGI (https://www.food.com/recipe/fish-and-fungi-british-virgin-islands-480612):  

For the Fish:

            – 2-1/4 lbs. firm white fish

            – ½ tsp Accent seasoning

            – 1 C water

            – 1 tsp margarine

            – 1 medium onion, cut into large chunks

            – 1 small tomato, chopped

            – 1-1/2 tsp vinegar

            – 4-1/2 tsp lemons, or 4-1/2 tsp lime juice

            – 1 lime, sliced

  1. To make the fish, put all the ingredients into a large saucepan and bring to a boil.
  2. Cover and reduce heat, simmering for 20 to 30 minutes or until the fish flakes with a fork.
  3. Garnish with sliced lime,

For the Fungi:

            – 5 oz. frozen okra

            – ¾ C fine yellow cornmeal

            – 1-1/4 C boiling water

            – 1 TBSP butter

            – 1/8 tsp salt

            – pepper        

  1. To make the fungi, bring the water to a boil and add the frozen okra.
  2. In a separate bowl, blend 2 TBSP of the cornmeal with about 6 TBSP water.
  3. Pour into the pot with the boiling water and okra and let cook for one minute.
  4. Slowly pour the rest of the cornmeal into the pan, stirring constantly.
  5. Add the butter and salt and pepper, continuing to cook for 5 minutes.
  6. Serve hot.

This was super good!!! The okra is cooked just right. I used Tilapia for the white fish!!

FRESH LIME PIE (British Virgin Islands) (https://www.food.com/recipe/fresh-lime-pie-british-virgin-islands-480617):  

            – 1-1/4 C vanilla wafer crumbs

            – 1/3 C butter, melted

            – 3 TBSP sugar

            – 3 eggs, separated

            – One 14 oz. can sweetened condensed milk

            – ½ C freshly squeezed lime juice

            – lime zest from 1 lime

            – ¼ tsp cream of tartar

            – ¼ C sugar

  1. Preheat oven to 350 degrees.
  2. Mix the wafer crumbs with the butter and sugar and press down into the bottom of a pie pan.
  3. Bake in the oven for 8 to 10 minutes, or until the crust is just starting to brown.
  4. Let cool.
  5. Put the egg yolks into a small mixing bowl and beat until they are thick and pale yellow.
  6. Stir the eggs into the condensed milk.
  7. Add the lime juice and rind and pour over the crust.
  8. Set aside.
  9. Beat the egg whites with the cream of tartar until the whites begin to thicken.
  10. Slowly add the sugar and continue to beat until you get stiff peaks.
  11. Spread the egg whites gently over the lime filling.

Bake at 350 for 15 to 25 minutes, or until the meringue begins to brown.

I have to say this was the BEST lime pie I have EVER eaten …. or made for that matter! Plus it was the first time I ever made meringue! Highly recommend.
