BERMUDA CODFISH BREAKFAST (https://myeagereats.com/recipes/bermuda-cod-fish-breakfast/):
For the Codfish & Potatoes:
– 2 packs of saltfish (or any dried salt fish)
– 4 large potatoes, peeled and squared
– handful of fresh thyme
- For thinner cuts of salt fish, wash, and soak in hot water 30 minutes before cooking.
- After soaking the salt fish, drain and refill with fresh water.
- Meanwhile, in a separate pot, boil potatoes with fresh thyme until the potatoes are halfway tender.
- Add salt fish to the pot and continue to boil.
- Finally, when the salt fish and potatoes are both soft, turn off the pot and serve.
For the Tomato Sauce:
– 2 small onions, sliced
– 1 garlic clove
– 3 TBSP butter
– fresh thyme
– ¼ C ketchup
– 1 TBSP tomato paste
– salt
– pepper
– ¾ C water (more if needed)
- Heat the pan and add a splash of oil followed by fresh thyme, onion, and garlic.
- Once the onions are translucent, put in the butter, tomato paste, ketchup, and water.
- Season with salt and prepper.
- Let the sauce thicken and serve.

Here is how my dish turned out. The tomato sauce added so much depth and flavor. Highly recommend!!!
BERMUDA RAISIN BREAD (https://cabanathyme.com/tag/bermuda-raisin-bread):
– 2 C flour
– ¾ C sugar
– pinch of salt
– 1 tsp cinnamon
– half a box of raisins (approx. 7.5 oz.)
– 2 tsp baking powder
– 1 C Lactaid milk
– 1 large egg, beaten
- Preheat the oven to 350F.
- Grease loaf pan with Crisco and dust with flour.
- Set aside.
- In a medium glass bowl, sift flour, and mix together with all the rest of the dry ingredients.
- Lastly, add milk and egg.
- Mix together well.
- Pour batter into greased loaf pan and bake in oven for about 45 min – 1 hour.
Serve with warm peanut butter, butter, jam, or as is.
