Guernsey is located in the continent of Europe. It has the English Channel, the United Kingdom, and Ireland to the north, Belgium and the Netherlands to the east, France to the southwest and south, Spain and the Bay of Biscay to the southwest and the Atlantic Ocean to the west.

GUERNSEY BEAN JAR (https://travelbystove.blogspot.com/2013/11/recipes-from-guernsey.html):

  • 1 lb. navy beans
  • 1 lb. lima beans
  • 1 lb. pork belly
  • 1 lb. onions
  • 1 stock cube (I used beef)
  • Salt and pepper for seasoning
  1. Soak the beans in cold water overnight.
  2. Then switch out the water for fresh and boil for half an hour.
  3. Add the pork, onions and stock cube.
  4. Keep boiling for another 20 minutes.
  5. Transfer the whole lot to a slow cooker and cook on low for 4 to 5 hours, or simply add more water and cook over low heat for another three to four hours in the pot.
  6. The dish is finished when the beans are tender and the meat is falling apart.

This was actually really good!! The pork belly really healps add the great flavor!

GUERNSEY BISCUITS (https://travelbystove.blogspot.com/2013/11/recipes-from-guernsey.html):

  • 3-1/2 C all-purpose flour
  • 5 tsp active dry yeast
  • 2-1/2 tsp salt
  • 1 stick butter (Guernsey if available)
  • 1 C warm milk (Guernsey if available)
  • 2-1/2 tsp sugar
  1. Sift the flour together with the salt.
  2. In a separate bowl, cream the butter with sugar and the yeast.
  3. Add the warm milk and let stand for 10 minutes to give the yeast time to become active.
  4. Add the flour and knead until not sticky at all but not crumbly, either.
  5. Let the dough rise in a warm place for about an hour, then transfer to a floured surface and punch down.
  6. Separate into balls (you should get about a dozen and a half biscuits out of this recipe). I actually rolled the dough out and cut them with a biscuit cutter, but how you do it is up to you.
  7. When you are done, transfer to a greased baking sheet and let rise in a warm place for another 20 minutes or so.
  8. Bake at 400 degrees for 20 minutes or until golden.

I used a wheat flour so that is why they are a little darker, but still the flavor was really good and was a great side dish to the beans!

GÂCHE MÉLÉE (“gosh mel-are”) (https://travelbystove.blogspot.com/2013/11/recipes-from-guernsey.html):

  • 1-3/4 C all-purpose flour
  • 2 sticks butter (Guernsey if available)
  • 1-1/2 lb. apples, peeled, cored and chopped
  • 1 C demerara sugar
  • ¼ tsp nutmeg
  • ¼ tsp cinnamon

¼ tsp British mixed spice (use whatever you have I your pantry if wanted)

½ C water

1 tsp salt

1 egg

  1. Preheat your oven to 275 degrees.
  2. Mix the flour and the butter with your fingers like you would a pastry dough, until the mixture resembles breadcrumbs.
  3. Add the rest of the dry ingredients and the apple.
  4. Mix until the apples are well coated.
  5. Now stir in the egg and water.
  6. Transfer this mixture to a 7-inch square baking pan.
  7. Sprinkle with a little extra sugar and then bake for two hours or until golden.

Those who like an apple crumble type dish will LOVE this! I also put vanilla ice cream with it and it was even better!!!
