Ghana is located in the continent of Africa. It has Burkina Faso and Mali to the north, Niger to the northeast, Benin, Togo and Nigeria to the east, Cameroon to the southeast, the Atlantic Ocean to the south, Côte D’Ivoire, Liberia, Sierra Leone, Guinea, and Guinea-Bissau to the west, The Gambia, Senegal and Mauritania to the northwest.

The capital is Accra.

The official language is English.

The climate is determined largely by the interplay of two air masses: a hot, dry continental air mass, and a warm, humid maritime tropical air mass.

GHANAIAN PEANUT BUTTER SOUP (https://divaliciousrecipes.com/ghanaian-peanut-butter-soup/):

  • 1LB. chicken thighs
  • 1 C peanut butter, smooth/creamy
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1-inch fresh ginger, minced
  • 1 scotch bonnet pepper
  • 4 C chicken broth
  • 1 TBSP tomato paste
  • 1 tsp chili pepper
  • 1 bay leaf, optional
  • ¼ tsp salt
  1. Place the chicken pieces in a large pot, season with salt, and add half of the chopped onion.
  2. Add the chicken broth, then bring to a boil.
  3. Reduce the heat and simmer for about 20 minutes, allowing the chicken to cook halfway.
  4. Blend the remaining onion, garlic and ginger with a cup of water until smooth.
  5. Pour the blended onion mixture into a pan and cook over medium heat for about 10 minutes, stirring occasionally.
  6. In a separate bowl, mix the peanut butter with 2 cups of water to form a smooth mixture. This will prevent clumping when added to the soup.
  7. Add the onion mixture to the pot with the chicken.
  8. Stir in the peanut butter mixture and add the scotch bonnet peppers, tomato paste, chili powder and bay leaf (if using).
  9. Bring the soup to a boil, then reduce the heat and simmer for 30-40 minutes, stirring occasionally to prevent the peanut butter from sticking to the bottom.
  10. Check the seasoning and adjust with salt if needed. If you prefer extra heat, break the scotch bonnet peppers to release more spice.
  11. Remove the bay leaf and discard.
  12. Serve the peanut butter soup hot.

I used chicken thigh for my other protein. This turned out really good!! If you like peanut butter, I highly recommend!!

VEGETARIAN GHANAIAN SALAD (https://www.reddit.com/r/easyrecipes/comments/15euug3/easy_recipe_for_vegetarian_ghanaian_salad/):

  • 16 oz. romaine lettuce, chopped
  • 8 oz. cucumber, sliced (about ½ English cucumber)
  • 6 oz. carrots, shredded (about 2 medium)
  • 1 small red onion, thinly sliced
  • One 13.7 oz. can baked beans, drained well
  • 5 oz. grape tomatoes, halved
  • 3 hard-boiled eggs, sliced
  • 2 small avocados, cubed
  • 1/ tsp freshly ground pepper
  • Salad cream, such as Heinz, for drizzling
  1. Add lettuce, cucumbers, carrots and onions to a large salad bowl and toss to combine.
  2. Top the salad with the beans, grape tomatoes, hard-boiled eggs and avocado.
  3. Sprinkle with black pepper.
  4. Drizzle the salad cream onto the salad before serving.

Even though baked beans in a sald sounds different to me, I would do this again easily!! Very good flavors!!

BOFROT (Puff Puff African Drop Donuts) (https://www.yummymedley.com/west-african-spicy-drop-donuts/):

  • 2 C all-purpose flour
  •  ¾ – 1 C lukewarm water
  • ¼ C sugar
  • 1-1/2 tsp active dry yeast
  • ¼ tsp nutmeg
  • ¼ tsp cayenne pepper
  • Pinch of salt
  • Oil for deep frying
  1. In a bowl combine all the dry ingredients including the flour, sugar, yeast, nutmeg, cayenne pepper and salt.
  2. Pour in the lukewarm water about ¼ cup at a time until the consistency of the batter is like rally thick cake batter. The dough should be fairly elastic. Depending on your flour, you might use a whole cup of water but add the water little by little, so you don’t end up adding too much.
  3. Set the mixture aside, allowing it to rise in a warm place for 1 hour.
  4. Once the donut mixture is almost double in size, heat up oil for deep frying up to 350-355F.
  5. Using an ice cream scoop, or your hands if you are so skilled, drop the batter into the hot oil without overcrowding the pan.
  6. Once one side of the donuts are lightly browned, turn and continue to fry until the donuts are done. The whole frying process for each batch took about 5 minutes.
  7. Drain donuts and serve warm with strawberry jam.

I used cinnamon and sugar first, but then also ate with some lingonberry jam! Very good!!!

My overall meal!! You can also bake one of their breads to have with this, but I liked the freshness of the salad. Helped balance it out!!
