South Sudan (Africa) — coming in a few weeks

South Sudan is located in the continent of Africa. It has Sudan to the north, Ethiopia to the east, Uganda to the south, the Democratic Republic of the Congo to the southwest, Central African Republic to the west, Chad to the northwest.

The capital is Juba.

The official language English.

The climate is tropical with wet and dry seasons based on the north’s dry air and the south’s moist air.

SUDANESE TAMIYA (https://cookpad.com/us/recipes/13541737-sudanese-tamiya):

  • 2 C chickpeas
  • 1 onion
  • 2 red pepper
  • 1 tsp baking powder
  • Garlic
  • 2 TBSP flour
  • ½ tsp salt
  • Maggie (Maggi noodles)
  • Oil
  • ½ tsp cumin
  • Ginger
  1. Soak 2 cups of chickpeas in water overnight.
  2. Add onion, red pepper and garlic.
  3. Blend in a blender or food processor.
  4. Add baking powder, salt, Maggie noodles, ginger, cumin, flour and mix thoroughly.
  5. Heat oil in a frying pan and fry the Tamiya on a medium heat.
  6. Serve with personal preference sauce.

This really turned out better than I thought. Very good!

SALATA TOMATIM BEL DAQUA (Sudanese Tomato Salad) (https://tarasmulticulturaltable.com/salata-tomatim-bel-daqua-south-sudanese-tomato-salad/)

  • 5 large tomatoes, seeds removed and diced
  • 4 green onions, finely sliced
  • 1 small green chili pepper, stem removed, seeded, and finely diced
  • ¼ C Italian parsley, chopped

Dressing:

  • ¼ C smooth peanut butter
  • 1/3 C oil
  • 2 limes, juiced
  • Salt to taste
  1. In a large bowl, toss together tomatoes, green onions, pepper, and parsley.
  2. Add peanut butter to a small bowl.
  3. Whisk in the oil until smooth.
  4. Mix in the lime juice and salt.
  5. Gently toss the tomato mixture with the peanut butter dressing.
  6. Serve immediately.

If you do not like peanut butter, then you will not enjoy this dressing as much, but I really liked it!!

  • 600gr clarified butter (ghee)
  • 1kg all-purpose flour
  • 1 TBSP baking powder
  • 180ml milk
  • 70gr powdered sugar
  • 1 TBSP milk powder
  • 1 tsp vanilla extract
  • 1 tsp mahlab powder
  • ¼ tsp salt
  • 50gr roasted sesame seeds

Date filling:

  • 120gr pitted dates
  • 1 TBSP clarified butter (ghee)
  • ½ tsp cinnamon powder
  1. Preheat the oven to 350F.
  2. In a medium-sized bowl, mixed the dry ingredients until fully combined.
  3. Add the clarified butter to the dry ingredients and mix well until the mixture is evenly coated.
  4. Gradually add the milk mixed with vanilla, continuing to mix until the dough comes together.
  5. Roll each piece of dough into a ball.
  6. If making filled cookies, prepare the date filling by mixing the pitted dates, ghee, and cinnamon powder until well combined.
  7. If adding fillings, press the center with your thumb to create an indentation, add the filling, then enclose it with the dough, ensuring it is completely sealed.
  8. Place the dough balls on a silicone mat or parchment-lined baking sheet, spaced an inch apart.
  9. Bake for 18 to 22 minutes, or until the tops are blonde and the bottoms are light golden brown. Avoid over-baking, especially for filled cookies, to prevent the fillings from hardening.
  10. Allow the cookies to cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely.
  11. Once cooled, dust the cookies with powdered sugar using a small sieve or roll them in a bowl of sugar to coat.
  12. Serve or store the cookies in an airtight container. They will keep well at room temperature for several weeks.

I did the filling as well. The cookies are really light and crumbly, but really good!!!
