ARROZ DE CABIDELA (Traditional Portuguese Chicken Dish) (https://www.food.com/recipe/arroz-de-cabidela-370310):
- 1lb. long-grain rice
- 2lbs. chicken pieces
- 4 tomatoes
- 3 roasted red pepper, from a jar, chopped
- 2 medium onions, chopped
- 4 garlic cloves, minced
- 6 C beef broth
- 1 C white wine
- 2 bay leaves
- 2 cloves
- 7 TBSP olive oil
- Salt & pepper
- Rinse the chicken and pat it dry.
- Heat half of the oil in a deep skillet and add the chicken, brown, on both sides, for about 8 minutes per side.
- Add salt, pepper, the cloves and the bay leaves.
- Add the wine, cover and cook over low heat until chicken is tender, about 35 minutes (If the chicken begins to dry, add just a little bit of water).
- Heat the remaining oil in a separate oven-proof saucepan, fry the onion and garlic for 5 minutes on low heat.
- Add one of the peppers and the tomatoes and continue frying for 10 minutes more.
- Incorporate the chicken and the broth (calculating double volume to that of the rice), and when it begins to boil, add the rice.
- Cook on high heat, uncovered, until the rice is about halfway cooked, about 10 minutes approximately.
- Meanwhile, heat the oven to 350F degrees.
- Place the chicken, loosely covered, so that it finishes cooking approximately for 10 minutes.
- Garnish with the remaining peppers and serve hot.

This made a good side dish!
COCADA ANGOLANA (Angolan Coconut Dessert) (https://www.food.com/recipe/angolan-coconut-dessert-cocada-angolana-456608):
- 1 C water
- 2 C sugar
- 4 whole cloves
- 4 C grated coconut
- 1-1/2 C whole milk
- 1-2 TBSP cinnamon
- In a large pot over medium heat, cook water, sugar, and cloves.
- Stir until dissolved.
- Heat until mixture reaches soft-ball stage on a candy thermometer (about 240F).
- Using a spoon carefully, discard cloves.
- Add coconut and milk.
- The mixture will clump.
- Continue to stir until smooth.
- Simmer for a few minutes.
- Spoon it into serving dishes and refrigerate at least 30 minutes.
- Sprinkle with cinnamon.
- Serve chilled.

This is very sweet, but good. I did half coconut sugar, and half granulated sugar. Yum!!
