Saint Eustatius (N. America) 6 September 2024

Saint Eustatius is located in the continent of N. America. It has Saint Maarten to the far north, Saint-Barthélemy to the far northeast, Saint Kitts and Nevis to the southeast, and Saba to the northwest.

The capital is Oranjestad.

The official languages are English and Dutch.

The climate is a tropical monsoon, with tropical storms and hurricanes common. The Atlantic hurricane season runs from 1 June to 30 November, and sharply peaks from late August through September.

GRILLED RED SNAPPER (https://www.eatingwell.com/recipe/280038/grilled-red-snapper/):

  • 1 TBSP smoked paprika
  • 1 tsp ground pepper
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • ½ tsp salt
  • ½ tsp cayenne pepper
  • Four 5oz. boneless, skinless red snapper filets
  • 1 TBSP extra-virgin olive oil
  • Lemon wedges
  1. Preheat grill to medium-high (400F-450F).
  2. Combine paprika, pepper, onion powder, garlic powder, oregano, thyme, salt and cayenne in a small bowl.
  3. Brush fish all over with oil; sprinkle the seasoning evenly over both sides of fish, pressing to adhere.
  4. Oil the grill grates.
  5. Grill the fish, covered, until it flakes easily, and a thermometer inserted in the thickest part registers 145F, 3 to 5 minutes per side.
  6. Serve with lemon wedges.

The spices on this enhanced the flavor so much!! Very delicious!!

GREEN SALAD WITH GRILLED VEGETABLES:

I grilled corn, mushrooms, and zucchini. I also used some of the spices from the fish and boy was this a good salad!!

  • 3 C fresh coconut, shredded very fine (reserve the coconut water for later use)
  • 3-1/2 C water
  • 1 TBSP ground cinnamon
  • ½ tsp ground nutmeg
  • ½ tsp ground pumpkin pie spice
  • ½ tsp ground allspice
  • 1 TBSP vanilla extract
  • ½ TBSP almond extract
  • 1-2 C sugar
  • 1 package pre-made pie crust (or make from scratch)
  • 2 eggs, beaten
  1. Put the shredded coconut into a large saucepan.
  2. Add 3-1/2 C water to the saucepan, as well as the coconut water from the coconut.
  3. Then add all the other ingredients and mix to combine.
  4. Add sugar until taste.
  5. Cover and let simmer for 40-50 minutes, or until the liquid reduces and thickens.
  6. Once complete, roll out one of the pie crusts to fit the pie dish you will use.
  7. Put the filling in the pie dish and spread evenly.
  8. Then take the other pie crust and roll it out, then cut long strips to be used to make a lattice for the top of the pie.
  9. Proceed to overlay some of the strips to make a lattice.
  10. Take the excess dough and roll out balls and place in the open spaces on the top of the pie.
  11. Use a fork to crimp the pie edges and cut off any excess dough from around the pie.
  12. Use the beaten egg wash and brush the overlay until it is completely brushed with egg wash.
  13. Bake at 425F for 40-45 minutes, or until golden brown.

This was my last country in the continent of North America. Now I only have three remaining continents: Africa, Asia and Europe. I may start throwing in the mix the provinces in Canada, and the states within the U.S. at some point. Could prove interesting!!
