MAGYAROS GOMBALEVES (Hungarian Mushroom Soup) (https://budapestcookingclass.com/hungarian-mushroom-soup-with-homemade-noodles-magyaros-gombaleves/):
For the soup:
- 21ozs. White or brown mushrooms – cut into slices
- 1 medium onion, diced
- 5 TBSP vegetable oil (or sunflower or canola)
- 1 tsp sweet Hungarian paprika
- 2 medium carrots, peeled and cut into ¼” slices
- 1 medium parsley root or parsnip, peeled and cut into ¼” slices
- 2-3 medium potatoes, peeled and cut into medium size cubes
- 3 TBSP all-purpose flour
- 2 TBSP sour cream + extra for serving
- 1 bunch parsley
- Ground black pepper
- Salt
For the noodles:
- 1 whole egg
- All-purpose flour
- 1 pinch salt
- In a soup pot, saute the onions in 2 TBSP of vegetable oil over low heat, stirring frequently, until translucent. Do not let them burn. Salt lightly to help tenderize them.
- Add the sliced carrots, parsley root or parsnips and the mushrooms, salt to taste and simmer for about 5 minutes.
- Prepare the roux, it will thicken your soup.
- Heat the oil in a pan and add 3 TBSP of flour, stirring constantly. You need just enough oil to make the consistency of your roux not too thick and not too thin. It should spread out in your pan and bubble a little.
- After 2-3 minutes of searing, when it starts to brown, take it off the heat, allow to cool and add 1 tsp of red paprika powder and 2 TBSP of sour cream. (Cooking tip: do not burn the paprika, otherwise it will become bitter). Set aside.
- Now prepare the noodles by in a medium bowl mix together the egg, the salt and the flour, and knead with your fingertips until a firm, smooth dough forms.
- Pinch off small pieces of dough about the size of a lemon seed and roll them. Set aside.
- Back to the soup: add 5 C water to the vegetables.
- Add salt and ground black pepper and half of the parsley. Bring to a boil, and then drop the noodles in and cook for about 10 minutes until the vegetables are tender.
- Now add some water or soup broth to the roux to thin it.
- Pour this mixture back to your soup pot and bring the soup back to a boil, then turn the heat off and sprinkle your soup with the rest of the parsley that you have chopped.
- Serve with sour cream. Enjoy!!!

- 1 C of dry cottage cheese or farmer’s cheese or ricotta
- 2 eggs (if you use ricotta, then 1 egg)
- 1 C all-purpose flour
- 1 tsp baking powder
- 2 TBSP sugar
- Few drops of vanilla extract
- 1 tsp grated lemon zest
- 1-1/2 C vegetable oil
- Jam
- Powdered sugar
- Place the cottage cheese in a bowl and crumble.
- Add 2 eggs (only 1 if you use ricotta), the flour, sugar, baking powder, vanilla extract and the lemon zest and stir to combine.
- Heat the oil to medium temperature (I used a smaller pan with about 2” of oil, it was enough to give a good depth for the doughnuts).
- With the help of 2 teaspoons, scoop and drop little balls into the hit oil and fry each side until golden brown, it takes about 4-5 minutes.
- Transfer the donuts to the paper towel and continue to fry the rest of the dough until finished.
- Sprinkle with powdered sugar and serve with apricot jam of any jam you love.

Oh my goodness were these good!!! I used ricotta cheese and the flavor was great!! I also ate it with apricot jam!!
