PRAWNS WITH ROMESCO SAUCE (https://www.bbcgoodfood.com/recipes/prawns-romesco-sauce):
- 1 red pepper, preferably the long, thin skinned romano variety
- 3 fat, fresh garlic cloves
- 1 fat, fresh red chili
- 1 large ripe tomato
- 10 shelled hazelnuts
- 10 blanched almonds
- 3 sprigs parsley
- Small slice day-old bread
- 8 TBSP olive oil
- 2 TBSP red wine vinegar
- 400g pack large, cooked, peeled tiger prawn, defrosted if frozen
- Prepare ahead – halve the pepper lengthways and remove the seeds and stalk.
- Line a grill pan with foil and put the pepper halves, skin side up, on the grill pan with the whole garlic cloves, chili and tomato.
- Grill for 2 minutes, turn the tomato, then grill for a further 2 minutes.
- Remove the tomato with a large spoon, then peel, quarter and remove the seeds.
- Then chop the tomato roughly.
- Continue grilling the pepper, chili and garlic for 4-5 minutes, until the pepper and chili skins have blackened, and the garlic is starting to soften (the garlic skin will start to split when it is ready).
- When cool enough to handle, peel and halve the chili, scrape out and discard the seeds.
- Peel the pepper and roughly chop both the pepper and chili.
- Spread nuts over the foil and grill until toasted.
- Finely chop the nuts and parsley in a food processor.
- Tip into a small bowl.
- Heat 3 TBSP of oil in a frying pan, add the pepper, garlic and chili and fry for 3 minutes.
- Tear up the bread and add it to the pan, turning it in the oil until lightly browned.
- Pulse in food processor with the tomatoes, salt, vinegar and oil until roughly chopped.
- Tip into a bowl.
- Leave to cool and store in fridge for up to 3 days.

Oh my goodness, the Romesco sauce adds so much flavor to the prawns!!! Highly recommend. I used Keto bread for my day-old bread.
STEAMED VEGETABLES:
- 1 chayote, roughly chopped
- 1 yellow zucchini, roughly chopped
- After roughly chopping both veggies, steam for 10-15 minutes.

I used a yellow zucchini and a chayote. So much flavor and they complimented the prawns!!
TARTA DE SANTIAGO (Spanish Low Carb Almond Cake): (https://www.dietdoctor.com/recipes/spanish-low-carb-almond-cake-tarta-de-santiago):
- 5 eggs
- 2/3 C erythritol (other substitute sugar of your choice)
- ½ TBSP lemon zest
- 1 tsp ground cinnamon
- 2-1/2 C almond flour
- 4 TBSP powdered erythritol (or substitute of your choice) for decorating
- Preheat the oven to 350F.
- In a large bowl, crack the eggs and add the sweetener.
- Using an electric mixer, or a hand whisk, beat together until smooth.
- Add the lemon zest and the cinnamon powder and beat again.
- Add the almond flour, little by little, and integrate it with the help of a spatula, making enveloping movements.
- Grease a 10” springform pan with butter and pour the mixture into it.
- Spread the mixture evenly with a spatula.
- Bake the cake for 30 to 3 minutes or until an inserted toothpick comes out clean.
- Let the cake cool down before removing it from the pan.
- To decorate the cake traditionally, cut the cross of Santiago on cardboard and place it on the cake.
- With the help of a sieve, sift and spread the sweetener powder over the cake.
- Then carefully remove the paper cross.

This made for a really good dessert. There really ARE good things to eat out there that are low carb and or Keto!!! This looks dry, however it is very much the opposite! Give it a try!
