MBUZI NYAMA CHOMA (Marinated Meat) (https://weeatatlast.com/wprm_print/15127):
- 5.5lbs. goat meat (or preferred choice of meat)
- 10 cloves garlic
- 1 bulb whole garlic, cut across in the middle
- 1 large red or white onion
- 1 lemon, juiced
- 1/3 piece ginger
- ½ C extra virgin olive oil, or preferred cooking oil
- 1 TBSP ground cumin
- 2 TBSP ground paprika
- 1 TBSP salt
- 2 stock cubes
- 6 sprigs fresh rosemary
- 2 bird-eye chilis, de-seeded
- 1-2 TBSP honey (optional for basting)
- 2 TBSP water
- Make the marinade by combining the garlic, ginger, onion, lemon juice, olive oil, cumin, paprika, salt, stock cubes, rosemary, and chili in a bowl.
- Blend briefly in a processor to maintain some texture.
- Make 2-inch slits on the surface of the meat or goat leg.
- Toss the meat in half the marinade in a bowl, Reserve the remaining marinade for basting.
- Massage marinade into the meat, covering the slits. Wrap in foil and marinate for 2 hours (or overnight for best results).
- Remove the marinated goat meat from the fridge and allow it to come to room temperature for at least 2 hours.
- Prepare and heat the grill to high. If using a charcoal grill, cover with ashes to moderate heat.
- To prevent sticking, oil a foil piece.
- Sear the meat on the grill for 3 minutes on each side, then transfer it to the foil.
- Top the meat with reserved marinade and add two more foil layers beneath, to end up with a triple layer of foil.
- Place two sprigs of rosemary and the bulb of garlic on top of the goat leg.
- Cover the meat loosely on top with foil so it resembles a tent.
- Add water to a baking tray. Lay the meat on it (Note: This helps cook the meat evenly and retains moisture). Transfer to the grill, ensuring it is at medium-low heat.
- Grill, turning from time to time, for 1.5 hours.
- Once almost cooked, mix the honey with 2-3 TBSP of hot water to make a glaze.
- Uncover meat, baste, and grill for another 15-30 minutes until browned and juices run clear.
- Once cooked, transfer the meat to a tray and allow it to rest for 10-20 minutes before carving.
- Serve it with mukimo, ugali, kachumbari or your favorite side dish.

I used chicken thighs and my charcoal grill. WOW the flavors are fantastic!! I highly recommend!!
MUKIMO (Authentic Kenyan Dish) (https://www.allrecipes.com/cook/3599784/recipe/fdf098a0-56ce-306d-ac6e-4574a07b756e):
- 6 C cubed raw potato, peeled
- 4 C pumpkin leaves, finely chopped
- 1-1/2 C maize (or use hominy or over-mature sweet corn)
- 1-1/2 C cooked beans – any variety (butter beans, lima, kidney etc.)
- 1 tsp salt
- Boil together in a large pot until the potatoes are tender.
- Drain and mash.
- Serve with vegetable beef or goat soup.

I could not find pumpkin leave, so used turnip leaves instead. Still a great flavor and a great side dish!!!
OREA MILKSHAKE (https://www.outofplacekenyan.com/oreo-milkshake/):
- 8 Oreo’s
- 2 scoops Vanilla Ice Cream
- 1 C milk
- Chocolate syrup (optional)
- The first group of four Oreo cookies split in the middle a remove the cream and place in the blender, cut the pieces up, and set aside to use for later.
- Divide the Oreo’s int two groups.
- The second group of four Oreo cookies, cut up into pieces and place in the blender.
- Add the 2 scoops of ice cream, and the cup of milk and blend for a couple of seconds.
- Place the first group of Oreo’s that you set aside, place a bit on the bottom of your glass. (if you have chocolate syrup, put some on the bottom, and spread around the glass. You can add a scoop of ice cream at the bottom.
- Add the shale into the glass and add another scoop of ice cream on the top and add the Oreo’s you set aside on the top.
- You can add chocolate syrup if you want.

I used Dunkies, which are like an Oreo from ChocZero. They use Monk Fruit instead of sugar and are great!!! I also made some chocolate syrup and used it on the inside of the glass for more flavor! I am a chocoholic!!!
