DRY RUB PAN ROASTED TILAPIA
SUKUMA WIKI (https://epicureandculture.com/tanzanian-recipes/):
- 3 TBSP canola oil
- 1 large onion, chopped
- 2lbs. kale or collard greens, de-stemmed and finely chopped
- 2 C tomatoes, chopped
- 1 C water or stock (I like veggie stock here)
- Salt and pepper to taste
- Heat the oil over medium-high heat in a large, heavy-bottomed pot.
- Add the onion and saute until translucent.
- Add the greens in batches sauteing each addition until wilted.
- Add the tomatoes, water or stock, salt, and pepper.
- Bring to a boil, then reduce the heat to low and simmer gently until tender (20 to 30 minutes).
- Taste for seasoning and adjust as needed.
- Serve with a little bit of broth.

I did a dry rub on the Tilapia, then pan roasted it in a cast iron pan for 4 minutes each side. This fish along with the Sukuma Wiki is very delicious!!!!
TANZANIAN COUSCOUS SALAD (https://dejavucook.wordpress.com/2013/10/05/tanzanian-couscous-salad):
- 2 C couscous
- 3 C hot water
- 1 tsp salt
- 2 C carrots (shredded)
- 1 C corn (fresh or frozen)
- 1 C macadamia nuts, chopped
- 1 C fresh parsley, chopped
- 2 tsp garlic, minced
- 2 tsp fresh ginger, grated
- 2 tsp fresh orange, grated
- ½ C pitted dates, chopped
- Put the couscous in a bowl.
- Pour boiling water over the couscous; let stand until cooked.
- Let stand until room temperature.
- Add the remaining ingredients and mix well; cover and chill for at least 1 hour.
- Serve on chilled bowls or plates; garnish with fresh parsley.

There are so many extra flavors in this couscous! All combine to make a very unique flavor and it also compliments the Fish and Sukuma Wiki!
MANGO CRISP WITH CASHEW-CINNAMON CRUNCH TOPPING (https://excitedfood.com/recipes/mango-crisp-with-cashew-cinnamon-crunch-topping):
- 2 C mango, peeled and sliced
- 1 large lemon, juiced
- 1 C cashews, chopped
- 1 C flour
- ½ C (1 stick) butter or margarine, room temperature
- 1-1/2 tsp ground cinnamon
- ½ C packed brown sugar
- Whipped cream or vanilla bean ice cream
- Preheat oven to 350F.
- Put sliced mangos in bowl and squeeze fresh lemon juice over them.
- Mix with a fork to combine.
- Combine cashews, flour, butter, cinnamon, and brown sugar and mix well to make topping.
- Top fruit with the mixture and bake in preheated oven 15 to 20 minutes,
- Serve warm with whipped cream or ice cream.

Oh my!!! I sis use Almond flour and brown sugar substitute, yet it still turned out so delicious!!! Highly recommend!!
