The Dominican Republic is located in the continent of N. America. It has The Atlantic Ocean to the north, Puerto Rico to the east, Venezuela, and the Caribbean Sea to the south, Haiti, Jamaica and Cuba to the west, and the Bahamas to the northwest.

The capital is Santo Domingo.

The official language is Spanish.

The climate is moderate and has a relatively mild tropical climate. Temperatures range from 69F to 90F.

DOMINICAN-STYLE FISH STEWED IN COCONUT MILK (https://recipecenter.stopandshop.com/recipes/175779/dominican-style-fish-stewed-in-coconut-milk):

            – 6 fillets tilapia (about 2lbs.), grouper, or red snapper

            – 1 tsp salt

            – ¾ tsp ground annatto

            – ½ tsp dried oregano

            – 2 TBSP olive oil

            – 2 red, green, yellow, or orange bell peppers, cut into 1/4-inch slices

            – 1 medium onion, cut into ¼-inch slices

            – 1 garlic clove, finely chopped

            – tublicwo 13.5oz. cans coconut milk

            – 2 TBSP cilantro, chopped, divided

            – 1 lime

  1. On a large plate, rub the fish all over with the salt, annatto, and oregano.
  2. In a 12-inch skillet, heat the oil on medium-high.
  3. Add the bell peppers and onion.
  4. Cook for 7-9 minutes, until the vegetables begin to soften, stirring occasionally.
  5. Add the garlic.
  6. Cook 30 seconds, until the garlic is fragrant, stirring occasionally.
  7. Add the coconut milk.
  8. Heat to a boil on high.
  9. Reduce heat to simmer and cook 10-15 minutes, until coconut milk thickens, stirring occasionally.
  10. Stir in 1 TBSP cilantro.
  11. Add fish to skillet in single layer.
  12. Spoon liquid over the fish to submerge.
  13. Heat to a boil on medium.
  14. Reduce heat to simmer and cook 5 minutes, until the fish is cooked through, spooning liquid over the fish occasionally.
  15. Carefully transfer fish to a large serving platter.
  16. Cover with foil to keep warm.
  17. Continue simmering sauce 5 minutes, until thick enough to coat back of wooden spoon.
  18. Squeeze all the juice from the lime into sauce.
  19. Stir in the remaining 1 TBSP cilantro.
  20. Season with salt to taste.
  21. Pour sauce over fish.
  22. Serve immediately.

I used Tilapia for the fish and boy is this a flavorful, delicious dish!!!

CAULIFLOWER RICE WITH VEGGIES:  

Not much to this one, but a great side dish to the fish. I even poured some of the coconut milk sauce over it as well!!!

KETO TRES LECHES CAKE (https://www.wholesomeyum.com/keto-tres-leches/):  

Vanilla Cake:

            – 1 C Besti Monk Fruit Allulose Blend

            – ¾ C unsalted butter, softened

            – 8 large eggs

            – ½ C unsweetened almond milk

            – 1 TBSP vanilla extract

            – 3 C Wholesome Yum Blanched Almond Flour

            – ½ C Wholesome Yum Coconut Flour

            – 1-1/2 TBSP baking powder

  1. Preheat the oven to 350F.
  2. In a large bowl, beat together the Besti and butter, until fluffy.
  3. Beat in the eggs, one at a time, then the almond milk and vanilla extract.
  4. Beat in the almond flour, coconut flour, and baking powder.
  5. Transfer the batter to a 9×13-inch pan and smooth the top with a spatula.
  6. Bake for 18-22 minutes, until the top is lightly golden and springy.

Tres Leches:

            – 1-1/2 C sugar-free sweetened condensed milk

            – ½ C unsweetened almond milk

            – ½ C heavy cream

  1. In a medium bowl, stir together the sweetened condensed milk, almond milk, and heavy cream.
  2. Using a fork, poke holes in top of the cake and pour milk mixture over the top.
  3. Refrigerate the keto tres leches cake for 1 hour.

Whipped cream:

            – 1-1/2 C heavy cream

            – 1 TBSP Besti Powdered monk fruit allulose blend

            – 1 tsp vanilla extract

  1. To make whipped cream, use a stand mixer (or hand mixer) to beat heavy cream, Besti powdered, and vanilla, until stiff peaks form.

Remove cake from refrigerator and spread whipped cream over the top.

Who doesn’t like a great Tres Leche Cake!!! This is a great recipe and I highly recommend it!!
